- Fresh thyme - 2 sprigs

Instructions
- Season the beef cheeks with salt and black pepper.
- In a large pan, heat the olive oil over medium-high heat.
- Sear the beef cheeks for about 3 minutes on each side until browned.
- Add the minced garlic and thyme to the pan and sauté for 1 minute.
- Pour the demi-glace sauce over the beef cheeks.
- Cover the pan and reduce the heat to low. Let it simmer for about 90 minutes or until the beef is tender.
- Once done, remove the beef cheeks from the pan and let them rest for a few minutes.
- Slice the beef cheeks and serve with the reduced demi-glace sauce from the pan.
